Bogdan family recipe for Hungarian Sour Potato Egg Soup

Step into Hungarian culture with the Bogdan Boys and some of their favorite Hungarian family recipes.

Basic Hungarian Potato Soup

Ingredients to make our base of Potato Soup:
6 Potatoes peeled and cut into cubes
1 Onion peeled and chopped
1 tablespoon of Hungarian Paprika
Salt to taste
3 Bay leaves
Parsley flakes
Caraway seeds to taste
2 tablespoons of Oil
Pepperoni and Sour Cream
Additional Ingredients to make Sour Potato Egg soup:
4-5 eggs cracked open and dropped into soup
Vinegar to taste

In a large soup pot on medium heat add oil onions and let the onions cook slightly then add paprika, bay leaves, parsley, potatoes and enough water to fully cover potatoes. Bring the soup to a boil and then let simmer until the potatoes are fully cooked. Add salt to taste.

Once your potato soup base has fully cooked you can now start adding the eggs and vinegar.

Start by cracking 4-5 eggs into the simmering soup and let them cook right in the liquid.

Now here is a tasty twist to this soup. You can add vinegar to taste which will enhance the spices and savory flavors of the soup. You will want to add a little at a time until you reach the desired taste.

Other optional ingredients are pepperoni and sour cream. Add pepperoni to the potato soup while cooking. Sour cream can be added to each serving.
